“Tagliolini with squid and pumpkin”

Ingredients:
- Tartuflanghe Egg Tagliolini 250g
- Pumpkin 300g (already cleaned and cut into cubes)
- 1/2 red onion
- Squid 4
- A drop of white wine
- A small piece of chili pepper
- A bunch of parsley
- 1 clove of garlic
- Oil, salt, pepper

Procedure:
1. In a pan, sauté the oil and onion. Add the diced pumpkin, salt, and pepper, cover with a lid, and cook over low heat for about 15 minutes.
2. Clean the squid and cut them into rings. Cook them in a pan with oil, garlic, a pinch of salt, freshly ground pepper, and a splash of white wine for 15 minutes.
3. Add the squid to the pumpkin sauce and continue cooking for another 10 minutes.
4. Finely chop the parsley and add it to the sauce.
5. Cook the tagliolini in lightly salted boiling water.
6. Drain the tagliolini, sauté them in the pan with the calamari and pumpkin sauce and serve.
